This study investigates the enhancement of vegetable and fruit storage technologies through the application of artificial olfaction, aimed at revolutionizing storage practices in Kazakhstan and beyond. By leveraging artificial intelligence and electronic noses, our research highlights the potential for smart storage systems to significantly mitigate losses and extend the shelf life of agricultural products. Initial experiments with electronic nose prototypes have shown high accuracy in detecting stages of potato spoilage, indicating a promising avenue for integration into intelligent storage systems. This paper proposes the development of compact, intelligent monitoring systems utilizing artificial olfaction for dynamic environmental control. Such compact storage solutions are particularly advantageous for small farms, requiring less investment while offering improved product safety, reduced losses, and enhanced efficiency in the cold storage chain. The implementation of a centralized network of smart storage units addresses the critical shortage of modern storage systems, supporting food security and empowering small-scale farmers by reducing investment and operational costs, and facilitating geographic accessibility.
